Some chocolate chips - not too many. It can overpower the whole taste. Like...10 or 15 chips.

1 cup of Corn Syrup
1 cup of sugar by volume
Vanilla - I use the "Eh, that's enough" method
salt - a pinch
A shit load of pecans - chopped AND whole (1 1/2 cups)
cinnamon - about a Tablespoon's worth
Maple syrup - Not very much 2 oz?
Pie Crust (either make your own or use pre made, I don't care)
Bourbon - Gentleman Jack seems to be best for this pie
**Optional Addition - Applewood Smoked Bacon (cooked earlier) 2 cooked slices
Step One:Pre Heat oven to 325 degrees and set pie crust on the counter to warm to room temperature
Step Two:In a small pot - add one stick of butter (1/2 cup), 1 cup of sugar, 1 cup of corn syrup.
Turn heat to medium and start stirring

THIS MIX SHOULD BE A CREAMY LOOKING GOOP.
At no point should it boil or become clear. EVER. You're just heating up the three ingredients to mix them, not boil. If you boil it, you'll end up with a Pecan soup...
Set pot aside to let cool slightly
Step Three:In a bowl - beat 4 eggs, a teaspoon of salt, a splash of vanilla, a table spoon of cinnamon.
Mix furiously
Step Four: Add 1 and 1/2 cups of chopped pecans to the egg mixture - and keep mixing it.

Step Five:Add the sugar/butter mix to the egg/pecan mix and mix well (Use the tempering method to prevent cooking the eggs...)
Optional Step For Carnivores:Chop up that bacon you cooked earlier and toss it in the pie mixture.
Step Six:Put your pie crust in the pan and build up the top edge - this will expand and boil up... you don't want it running over. Throw some chocolate chips on it, pour the full mix of pie-stuff on top of that
Step Seven:(this is where the love comes in)Brush maple syrup along the edge of the pie crust
Add whole pecans to the top of your pie and brush them with syrup as well - Dust lightly with cinnamon
Step Eight:Bake that mo-fo for 50-55 minutes

Step Nine: Remove it from the oven and pour 1 oz of your favorite bourbon over the top of the pie and listen to it sizzle...
Let stand until cool... eat with fork.
**If, however, you're using the tart pan like I am above - wait until cooled, set a large soup can or other object smaller than the opening of the pan's rim and set the pie on it... pull the ring down to expose the pie. Cut with serrated knife once cool.
